More nice things from today that I forgot to post about in the last note...

A lovely bracelet arrived from [livejournal.com profile] kes_zone in the mail today. She was giving people who donated for her cancer walk thingy a bracelet. I requested one in black and pink because 90% or more of my wardrobe right now is black and pink. When I unwrapped it I was utterly delighted with it and put it on immediately because, wonder of wonders, it matched my outfit today ;)

I spent a good block of time today baking, which I have decided I really enjoy. I am also really enjoying having people next door that I can share my passion with because let's face it, Jason and I do not need to be in a race to finish up things like 2 dozen cupcakes before they go stale. A few days ago Greg and Rhonda came to Dinner. The deal is they bring the food and the kids, I make dessert and set the table and clean up after while they play Rock Band or the Wii or whatever strikes their fancy. It's a good division of work. Greg brought a yummy meatloaf, mashed potatoes and green beans with garlic (very yum). I made chocolate cupcakes with spider web frosting (I'll post pics later, very pretty) and they went over very well. I also used these new silicon baking cup things which were delightful except that my cake recipe requires 27 or so cups, not the 24 I had, so there was a bit of cake-overflow mess. The next night Greg knocked on the door offering to trade me the remaining cupcakes for his home-made fajitas. I think we got the good end of that trade.

Anyway, getting back to today's baking. Apparently this was Rhonda and Greg's 9th anniversary and they decided to celebrate by making it official at last. They didn't want to make a big deal about it, just going to the justice of the peace in jeans and t-shirts and making it legal. But I thought it would be nice to mark the occasion a bit, so I bought them a vase full of flowers and baked a "wedding cake" for them. More of my chocolate cake batter (made from scratch of course) with whipped cream and strawberries in the layers and chocolate frosting on it all. I was a bit sad and pathetic in that I ran out of everything while baking. I actually had to crush sugar cubes with my mortar and pestle to get enough loose sugar. I'm not sure if that should be considered stroke of genius and resourceful or just pathetic.

Shopping list for tomorrow:
butter
vanilla extract
sugar

I have the car again tomorrow because it's Georgia's 2-month appointment and her first batch of vaccinations since the hospital. Wish us luck!

I know one can freeze baked goods, but I find they often taste a little "freezery" when one does that. For something like muffins to take to work, that's okay because it's a convenience thing. For a treat like cupcakes I like them to be as fresh as possible so I get full enjoyment. If I'm going to be taking on the empty calories it had better be worth it.

Cookies are the only treat that I feel doesn't suffer from freezing, so those I will make and freeze no prob. Speaking of which, almost time to start on Christmas baking. Where has the year gone eh?
