I'm even lazier with muffins. I don't use a mix, but I make a bunch of them, individually wrap them and freeze them for the mornings when all I can muster is operating a microwave.
That said, I never eat breakfast at home. If I bring it to work, that's an easy way to waste the first half hour of the day.
